The Cardiologist's Wife - Making Good Food Choices and a Recipe for Chinese Long Beans with Peanuts

I read an interesting article on MSN today, “12 Foods Drs. Won’t Eat And Why”, countered by “Ten Foods Skinny People Eat Every Day”. Of course the first headline caught my attention right away and I had to read it to see if I agreed with it. First up was bacon and I laughed. I love bacon. We’d eat it every day, maybe every meal. But we don’t eat it often for exactly the reasons stated in the article: it’s loaded with chemicals, salt and fat. Next up pasta, cereal and pastries. We try to avoid wheat products in general since reading the book “Wheat Belly” as wheat is highly addictive and raises your blood sugar more than regular table sugar. (For more information on wheat, see my article on the book, “Wheat Belly”.) I limit bread and pasta to once a week or less.

The rest of the 12 foods were the usual culprits of processed foods and soda, filled with sugar, salt, saturated fats and little in the way of nutrition. On the flip side, the 10 foods skinny people do eat was a list of whole, real foods like eggs, spinach, raspberries and plain water. The most processed were chocolate, almond butter and strangely, pickles. I have a problem with pickles in that they are usually high in salt and perhaps sugar, but I guess they would be better than a bag of chips if you have a craving. Sometimes it comes down to making a better choice.

The point is to pick real, whole foods and skip the processed foods as much as possible. Quit taking the easy route to eating which leads to weight gain, diabetes, heart disease and cancer. Your children will eat wholesome food if you take the time and effort to learn to cook a few decent recipes and you don’t offer them crap from a box or the drive through.

Food should also be fun. I got so excited when I found Chinese long beans or Yard long beans at the ASU Farmer’s market. (Yes, I know I am pretty nerdy about the farmer’s market.) I grabbed a bunch and hurried home to find a recipe. My family really enjoyed these and if you can’t find long beans, try it with some regular fresh green beans, the skinnier the better.

Chinese Long Beans with Peanuts

1 1/2 pounds Chinese long beans

1/2 cup unsalted dry roasted peanuts

2 tsp. soy sauce

1/2 tsp. salt

1/4 to 1/2 tsp. red pepper flakes

1 Tbsp. olive oil

1 clove garlic, minced

1 large shallot, chopped

2 Tbsp. fresh lime juice

Wash beans and cut into 3/4 inch pieces. Bring a large pot of water to boil, add beans and cook 3 to 5 minutes. Rinse with cold water and drain well. While beans drain, pulse peanuts in a food processor until just ground; do not make a paste. Heat oil in a large skillet, add garlic and shallot, Cook 1 minute, then add peanuts. Cook about 30 seconds more and add beans. Stir fry about 2 to 3 minutes until well coated and tender. Stir in soy sauce, salt, red pepper and lime juice. Serve warm.
