I know I keep repeating myself but so do ministers and we keep going to church. Eat plenty of fruits, vegetables and lean protein, stay away from added sugars and processed foods, cigarettes and excessive alcohol; get some exercise and fresh air every day. I fully understand and sympathize with how hard it is to eat nutritious foods in today’s society. The wrong foods are everywhere; donuts at the meeting, fast food for lunch and the cookie fundraiser at school. It takes a huge effort to stay strong. I struggle every day. Here is an easy way to get in some great nutrition and have a breakfast that will keep you full till lunch time. Whenever I eat in a new restaurant and see an unusual dish, you can be sure I’m going to try it. People eat beans for breakfast in other countries, but it is not something you see much around our neck of the woods. I had this breakfast dish in a restaurant in Bentonville recently and it inspired me to make something similar once I got home. Poached Eggs on White Beans and Grits Trust me, this tastes so good and is so good for you! You can even make the grits the night before and drain and rinse the beans to make things go more quickly in the morning. Beans are cheap, about 10 to 40 cents a serving but loaded with nutrition - 1 cup has 13 grams of fiber, 19 grams of protein, 14% of your daily needs for calcium, 23% of iron and several other important vitamins and minerals. Canned beans do have too much sodium so buy no salt added if possible or at least drain and rinse them before using. [+] add comment |
