The Cardiologist's Wife - Salad for Breakfast? You Bet!

“I’ll have the salad for breakfast!” How often do you hear that statement? I’m hoping you’ll hear it more often and even say it yourself after reading today’s post. Lately I’ve been more fixated than usual on food and what we eat. Food, or rather food like substances, is at the root of many of our health problems and if we would only learn to make good food choices, we would feel better and enjoy better health.

Here’s a challenge: try keeping a food diary for a few days or as long as you want. Note what you eat, approximately how much and how you feel afterwards. For example, do you feel uncomfortably full, sluggish and sleepy, energetic and alert or did you suffer indigestion later? When you start to realize just how food impacts your life, you will be able to make better choices. Last Friday, I made some poor food choices and paid the price of indigestion for eating too much fried food. When I eat plenty of vegetables and fruits, I notice that I feel satisfied and perky. I used to eat A LOT of cereal but when I gave up those empty carbs, I noticed many of my cravings went away.

I didn’t say this was easy. Habits are hard to break plus we have emotional attachments to food and eating. Making and drinking coffee is a ritual, we drink out of a certain mug, cereal at night is comforting after a long day and we must have Mom’s pecan pie for Thanksgiving. In our busy lives, no one wants to stress over changing their diet to include foods they aren’t certain they’ll like. It might help to think of food as an adventure. Be open to trying new things and exploring different tastes.

Back to breakfast salads. I get bored with the same old thing (who doesn’t) so once in awhile I get creative. My husband is highly appreciative of this creativity as he benefits without doing any work. I have been on a quest to add more vegetables and fruits to our diet. For some reason, we don’t often eat many vegetables for breakfast in the U.S., though other cultures do. I had a bit of inspiration, bought the groceries and surprised my husband with a breakfast salad one Saturday morning. We both loved it. It was satisfying on so many levels plus it was easy to make. It even has BACON! The healthier ingredients will make you feel good about eating the bacon.

Breakfast Salad

Arugula, or your favorite salad greens, just not romaine or iceberg
1 grapefruit, peeled and segmented
1 avocado, peeled and sliced
2 boiled eggs, halved
4 strips of bacon, cooked till crisp and well drained
champagne vinaigrette

Place a large handful of greens on a plate and drizzle with one tablespoon of vinaigrette. Top with half the grapefruit segments, half the avocado and one boiled egg. Lay two strips of bacon on top. Makes two servings.

P.S. I tried the breakfast salad at a restaurant in St. Louis this weekend - delicious! You have seriously got to try it.
