From the Cardiologist's Wife

Starting next Wednesday, Lisa Tedder, a.k.a. "The Cardiologist's Wife," will be posting a weekly column on Jonesboro.com. She will be sharing heart-related health information, healthy eating and exercise tips and information about living a healthy life. Lisa's column will also feature many of the yummy healthy recipes that she is known for.

You'll find more on Lisa in the February issue of Occasions, and make sure you check back here next Wednesday for her first post. In the meantime, to give you a taste of what's to come, here is one of her family's favorite recipes:

Slow Cooker Minute Steaks with Tomatoes and Carrots

Ingredients:
*4 to 6 minute steaks
*1/4 cup all purpose flour
*1/2 tsp. pepper
*1/2 tsp. salt
*1 tsp. garlic powder
*1 onion, sliced thin
*1 1/2 cup carrots, sliced thin
*1 can no salt added diced tomatoes with juice
*1 1/2 tsp. basil
*Pepper to taste
*1/2 tsp. salt

Mix flour and seasonings in a shallow bowl or dish. Dredge minute steaks in flour mixture. Heat 1 to 2 tbsp. olive or canola oil in a nonstick pan over medium high heat.  Brown minute steaks and place in a slow cooker sprayed with baking spray.

Add sliced onion to pan and brown in remaining oil and drippings. While onion cooks, slice carrots and sprinkle over meat in crockpot. Spread can of tomatoes evenly over meat and carrots. Add browned onions and sprinkle with spices. Cook 6 to 7 hours on low or 4 on high. Serve over mashed potatoes or rice.  A green vegetable rounds out the meal.
