“An apple a day keeps the…….”, you know the rest. It’s so true that fruits and vegetables contain the exact things our bodies need to remain strong and healthy. If only we would learn to eat real, whole foods and avoid processed unnatural, food-like substances, we’d be a lot better off. Ask yourself right now - how many servings of fruits and vegetables have you had so far today? I hope you manage to fit in a bare minimum of 3 servings a day; 5 to 7 would be excellent. Remember, french fries and ketchup don’t count since the salt, sugar and fat content render fries a dietary mine ready to explode.

I realize that many of you find it hard to fit a serving of fruits or vegetables into your breakfast but I have a delicious breakfast option that will help. Recently, I was bored with the usual breakfast fare and I dreamed up the following breakfast idea. My husband did look at it skeptically when I set it in front of him but after eating a few bites, he was hooked. So is my daughter. I call it the PB Apple N Egg Breakie. This is quick to make, especially if you boil the eggs the night before. You can even slice the apples ahead of time but be sure to put a little lemon juice on them to keep them from browning. I’ve also heard you can reassemble the apple and rubber band it to hold it together and that will prevent browning but I haven’t tried it. As you can see from the picture, it is an attractive breakfast to eat, which may entice your pickier eaters.

PB Apple N Egg Breakie

one apple, your choice
1 boiled egg, peeled, halved, salt and pepper to taste
1 to 2 Tbsp. peanut butter or other nut butter
1 tsp. chia seeds, optional
1 Tbsp. sliced almonds or other nuts

Wash and core the apple. Slice into thin slices and arrange in a fan shape on a plate. Microwave the peanut butter 10 to 20 seconds until soft enough to pour. Drizzle PB over the apple. Top with chia seeds and almonds. Serve with the boiled egg.

This breakfast is incredibly satisfying as well as delicious. The peanut butter and egg provide protein which along with the fiber, keeps you full till lunch. As far as the apple, one medium apple has about 4 grams of fiber, 95 calories and 14% of your daily needs for vitamin C.

The fiber in apples helps lower cholesterol levels while other nutrients provide protection against inflammation in the body that can lead to heart disease and diabetes. Apples can help keep your digestive system functioning properly and protect against Alzheimer's and Parkinson’s disease. Eating an apple before working out may boost your endurance as apples contain a certain antioxidant that helps your body take in more oxygen.

Give this apple breakfast idea a try. It makes a great after school snack too, especially for athletes needing a long lasting energy boost.
