Little Hands' Skillet Cookie Recipe

This past weekend, we were finally coming off the cranky and sleepiness that came with a virus. That was definitely the hardest week with both our girls since the week Miss Story came home and refused to sleep in our accommodations as a newborn. Needless to say, there was no crafting, almost no baking and very little play of any sort. Of course, there was at least a little baking...I have a serious sweet tooth, after all. I decided a couple nights ago to try a skillet cookie. It turned out to be a very good activity for London to help with because, though she couldn't help while it was on the stove, most of the mixing was in the skillet when it is warm but not hot. It turned out to be a large rich cookie cake, that my family loved. I mostly loved the fact that it used one skillet to mix and cook everything.

This is the link to the recipe I used. She also recommended putting a big scoop of vanilla ice cream on top when it's still warm. Too bad mine was a last minute chocolate craving with no ice cream in the house. Next time.

I'm truly bad at recipes, mostly because I don't follow them and usually just wing it, so I'll post the ingredients and you can follow the link for the directions. She gives great step by step with pictures, and I don't want to copy and paste because that's breaking blogger etiquette haha. So, hope you enjoy it!

One-Pan Dark Chocolate Chunk Skillet Cookie

INGREDIENTS
*1 stick (8 tablespoons) unsalted butter
*1/2 cup granulated sugar
*1/2 cup light brown sugar
*1 teaspoon pure vanilla extract
*1 egg
*1 1/2 cups unbleached all-purpose flour
*1/2 teaspoon baking soda
*1/4 teaspoon kosher salt
*1 cup chocolate chunks
