From the Cardiologist's Wife: Breakfast Ideas

I woke up pretty hungry this morning but not really wanting my usual week day breakfast (2 eggs, boiled, scrambled, sunny side up or poached). I settled on some Cream of Wheat which boiled over and made a terrible mess. By the time I got the kids off to school and all 7 animals fed and taken care of, it was cold too. I ate it anyway.

If you have been reading my blogs for any length of time, you know I am a big advocate of a good breakfast to get your day started right. However, mornings are rushed and there isn’t much time to fix everyone a meal so I’ve been doing a little research. I’ve found two recipes I think will provide a nice change and give everyone’s batteries a healthy charge. I also came across a green smoothie made with kale and if I work up the courage to try it, you can be sure I will write about it and post pictures of me drinking it. But don’t hold your breath.

Anyway, the first recipe I plan to spring on my family involves fish. Now don’t turn up your nose at the thought. The other recipe has a Mexican twist and both require you to try something new. Both will be low in bad fats unless you get carried away with the cheese and both pack a power house of nutrition.

Egg and Smoked Salmon on an English Muffin
Toast 1/2 an English muffin. While that toasts, scramble one or two eggs depending on your appetite. If you are feeling adventurous, add a bit of finely diced red onion and/or a bit of capers to the egg mixture. Top the English muffin with a slice of tomato (ha, as if you could find a decent one), a slice of smoked salmon and the egg. Sounds delish to me.

Breakfast Meximelt
Spread a heaping spoonful of refried beans (heat in microwave first) on a toasted bagel or whole wheat toast, top with salsa and a bit of grated cheese. How is this not good? I love refried beans.

Using whole wheat bread ups the nutrition level but you could substitute a flour or corn tortilla if you must. You could also add a bit of scrambled egg to the meximelt but the original version will be faster to make.

You can and should fit in a good breakfast every morning for every member of the house. No excuses about how rushed you are. At the least, grab a banana and drink a Carnation Instant breakfast. I posted a baked oatmeal recipe on 10/21 that you can whip up the night before and bake the next morning or go ahead and bake at night. It stays good for several days and is similar to eating a dense coffee cake but healthier.
