Happy Mother's Day and a Quiche Recipe from the Cardiologist's Wife

This is for all you men and children out there: In case you haven’t noticed, you have four days until Mother’s Day. If you don’t have a clue what to do for the woman who gave you life, read on so you don’t end up in the dog house this Sunday. I don’t know about your mother (or the mother of your children), but I always appreciate my family doing things for me like washing my car and cooking a meal. Flowers! Did I mention that I love flowers? I also love the cards my children make as they usually go to some lengths to be clever.

So, here’s the game plan. Sneak the kids off to their room with a supply of paper, stickers, crayons, glitter and glue and tell them to make Mom a card. Just make sure the mess is cleaned up before Mom has to do it. Teens can make something online, putting their superior tech skills to good use. Adult children can just purchase a card.

Plan a special meal cooked at home with the kids helping as much as their age permits. And yes, I do have a pretty simple quiche recipe that even my husband can make and that men will like because it has plenty of bacon. No, I did not say it was healthy. Make a grocery list and do the shopping before Sunday. Pick up a bouquet of flowers while you are doing the grocery shopping. Go ahead and give her the flowers early. Gets the weekend off to a good start. If there is something you know she wants, get it today, no more procrastinating.

Serve this quiche with a nice fruit salad. If you want to make it extra special, make the Almond Tea; it’s refreshing. I know this is the quintessential woman’s lunch that men pretend to abhor but it is Mother’s Day. Put off grilling those steaks for another weekend. For dessert, serve mango sorbet with ginger snaps. The Moms in your life will appreciate your original, creative and thoughtful preparations.

Spinach and Bacon Quiche

INGREDIENTS:

*6 to 8 slices thick cut bacon, preferably Petit Jean 

*10 oz. fresh spinach

*1 1/2 cups half and half 

*6 eggs 

*1 cup shredded cheese, your choice, try Fontina or Jarlsberg 

*1/2 tsp. pepper 

*1/4 tsp. salt 

*1 store-bought pie crust, try Pillsbury

DIRECTIONS:  Heat oven to 375. Fit crust into pie plate. Chop bacon into bite sized pieces and cook in a large skillet over medium heat until brown and crisp. Place on paper towels to drain fat. Combine eggs, salt, pepper and half and half in a large bowl and whisk till well combined (mixture will be uniformly yellow). Place spinach in the bottom of the crust; top with bacon and then cheese. Gently pour egg mixture over spinach/bacon/cheese. Bake for 35 to 45 minutes or until a knife inserted into the middle comes out clean. Almond Tea 2 cups sugar 4 cups water 2/3 cup lemon juice 2 Tbsp. almond extract 2 cups strong brewed tea Ginger ale Combine ingredients in a large pitcher. Add enough ginger ale to fill pitcher. Chill several hours.
