Little Hands' Frozen Lemonade

As we near my due date in a few days, I'm feeling a bit like a watched pot that won't boil. Texts and calls come in regularly asking if I've had a baby yet, and I think the girls are beginning to think this is just my new body structure. What I'd really love to do on these hot days is sit inside in the air conditioning and knit or stare blankly at a wall, but my children have much different ideas about how a summer day should look.

To compromise, I've been getting by on lots of frozen treats and crafts they can do on their own beside me. One of the best ways to use up fruit that may be going bad fast is to puree it with a bit of honey or sugar and pour it into popsicle molds to freeze for later. Watermelon is the girls' favorite frozen fruit puree.

However, the very favorite treat seems to be frozen lemonades. I am no fan of anything lemon, but the rest of my household loves all things lemon. I make up some lemonade every so often, but when it's frozen, it adds an extra special summer fun to it.

Here's the recipe I use for easy lemonade:

INGREDIENTS:

*1 cup boiling water

*2 cups sugar

*2 cups lemon juice

*Water to fill to a gallon

DIRECTIONS: Mix the sugar and boiling water until the sugar dissolves. Mix in the lemon juice. Add in water until it all equals a gallon. I pour some into ice cube trays to freeze and leave the rest to drink. When it's frozen, I puree the cubes in the blender until it's smooth and serve.

I'm not a fan of lemon, but when it's frozen and outside temps are flirting with the upper 90s, it's more than a refreshing treat even for me!
