The Cardiologist's Wife's Fruit Salsa

Summer is here, and so are summer parties and get-togethers. If you are looking for something new and different to serve your friends and family, give this easy fruit salsa a try. I served this at a cocktail party on Memorial Day weekend, and everyone was asking for the recipe. Prepare this a couple of hours before serving to chill thoroughly. Kids and adults will enjoy this dish.

Fruit Salsa

INGREDIENTS:
1 green apple, such as Granny Smith, cored and finely diced
1 pint strawberries, washed, drained and finely diced
3 or 4 small kiwis, peeled and finely diced
3 Tbsp. fruit preserves, any flavor

DIRECTIONS:  All fruit must be finely diced to make it easier to scoop up on a chip. Melt the preserves in a microwave safe cup, about 20 seconds. Stir the fruit and the preserves together gently and place in a pretty bowl. Serve with cinnamon pita chips. This would also be delicious spooned over slices of grilled pound cake. This recipe can be doubled for a large crowd.
